GENERAL

Description

Full Professor at the School of Chemical Engineering and Senior Researcher recognized by Minciencias, with experience in the design and management of research projects. My work focuses on the transformation of agricultural raw materials through biotechnology, the development of functional foods using encapsulated polyphenolic extracts, and the optimization of cacao fermentation using starter cultures. I also research new applications of metabolites extracted from agro-industrial waste to drive innovation in food and cosmetics.
