GENERAL

Biography

Professor Mauricio Espinal Ruiz is a specialist in the areas of food chemistry, chromatography (GC-MS and LC-MS), and biochemistry, with a particular focus on the kinetics of surface-active enzymes. His research centers on the technologies and structural design principles of delivery systems used to protect and transport nutrients and bioactive compounds. Additionally, he is dedicated to the physicochemical, nutritional, and functional characterization of complex food matrices.
